Delicious fragrant coconut rice from Central Java

Ingredients: (for 4 persons approx)

500 g rice
125 g (cube santen)
1 stalk lemon grass bruised
2 salam leaves
salt to taste
6 djeruk purut leaves
approximately 600 ml of water

preparation:
Los santen in the water. Add the remaining ingredients and cook the rice cooked this for 15 minutes and then steamed. Remove the herbs. Put the rice on a platter and garnish with strips of Lombok, omelet and fried onions. Of course, some slices of cucumber there.

ingredients:

1 kg chicken
6 tablespoons oil
1/4 liter of water
1 chopped onion
1 clove garlic
1 teaspoon sambal oelek (or three rawitjes)
1 teaspoon laos
1 teaspoon turmeric
piece of tamarind
salt
lemon juice
1 lemongrass stalk

preparation:
Cut the chicken into pieces and then rub with a paste of two tablespoons of water with a piece of tamarind and salt. About 1 hour to withdraw.
Onions, garlic, galangal and turmeric into a paste rub and fry in oil until onions are yellow and then add the chicken pieces. Cook all together until chicken is brown.
Water and add the crushed lemongrass. Now the chicken and continue cooking until it is tender. Finish with lemon juice.

Ingredients:
700 g boneless and skinless chicken (I prefer choose thigh), rinse off under cold water and pat dry
fat and skin pieces
homemade chicken oil (can be substituted for melted margarine)
kecap manis
bamboo skewers, soak in cold water

Saté Peanut Sauce:
200 g homamade roasted garlic peanuts*
4 red cayenne pepper, discard the seed
5 garlic, sliced
3 shallot (if you use smaller size, you will need 5 pieces), sliced
1/2 tbsp. petis udang (dark shrimp paste)
1/2 tbsp. terasi (dried shrimp paste)
2 tbsp. coconut sugar or as desired (if you use palm sugar, you may want to reduce the amount)
1 tsp. seasalt or as desired
200 mL hot water
2 tbsp. cooking oil (I used my homemade chicken oil)

Complement:
lontong (rice cake)
fresh shallot slices
acar (cucumber pickle)
sambal

Methods:
The Sauce

1. Stir fry cayenne pepper, sliced shallots, garlic and terasi with cooking oil until fragrant.

2. Process stir frying mixture, peanuts, petis udang, coconut sugar and seasalt in a food processor until smooth.

3. Transfer the peanut mixture to a pot and add hot water. Cook until a thick mixture forms. Remove from heat and set aside.

Basting 1:
Combine kecap manis and chicken oil in a bowl.

Basting 2:
A flat plate, combine 2 tbsp. cooked peanut sauce, 1 tbsp kecap manis and 2 tbps. freshly squeezed lime.

The Sate:
1. Cut chicken meat into 2 x 3 cm2

2. Thread 4-5 pieces of chicken pieces into each skewer, including 1 piece of fat or skin in the middle.

3. Bast them with basting 1. Set aside for 15 minutes. Grill until half done. Then, transfer them to a basting 2 plate and bast. Regrill them until done.

4. For the sauce, combine the rest of cooked peanut mixture with kecap manis and freshly squeezed lime.

5. Serving: on a plate, place sliced lontong, the sauce, and saté. Sprinkle shallot slices over. On the side, you can put acar and sambal.

Note:
* You can use organic crunchy peanut butter instead of homemade roasted garlic. I sometimes go to the natural product store by my house, buy organic peanuts and grind them there. The store has provided a peanut grinder to make our fresh own peanut butter.

Sate Tempe Plappa is a kind of sate that has spicy and sweet taste. This idea was borrowing from Sate Plappa of Madura island which is made from Beef. Tempe is processed from soybeans and fermented for 3-7 days depend on the area and the humidity. With a high contain of fiber, calcium, vitamin B and zinc, Tempe is very suitable for vegetarians. In Indonesia, tempe is often deep fried and enjoy by dipping it into spiced kecap manis (a mix kecap manis with chopped chilies and drizzled keylime).

Beside tempe, Kecap Manis is very common to be used in Indonesian cooking especially the Javanese cooking.  Kecap Manis or Indonesian sweet soy sauce is made from soybean as well.  With sweeter taste and more complex falvaor than regular soy sauce, Kecap Manis has an intensely dark brown and syrupy thicker sauce.  Kecap Manis is sweetened with coconut or palm sugar and seasoned with various ingredients, which generally include garlic and star anise.  If it’s not available there are many different recipes on the internet on how to make kecap manis.

Ingredients:
1 block tempe (tempeh)
1 tablespoon tamarind, dissolved in a small amount of luke warm water
kecap manis
salt
2 tablespoons cooking oil

Spices to be ground:
– 3 long red chilies (cayenne pepper)
– 3 cloves garlic
– 1 shallot
– 2 candlenuts

Method:
1. Cut tempe into small diced. Combine with all ingredients and marinate for about 1 hour or more.
2. Thread tempe diced into skewers.
3. Grill on a BBQ while occasionally baste or smear with the remaining marinade until done. If you like a sweeter taste, add kecap manis into your remaining marinade.
4. Ready to serve.

1 whole chicken, cut into 4 pieces
3 cm galangal
2 Indonesian bay leaves
1 can (520 ml) coconut juice
1 tbsp ground coriander
1/4 – 1/2 tsp turmeric powdered
1 tsp tamarind

Puree:
3 cloves garlic
6 shallots
1 tsp salt
2-3 coconut sugar sliced

Directions:
1. Combine all ingredients in a large pot. Simmer the pot until the chicken tender and the water evaporates.
2. Grill/roast until brown. Serve with sambal, lalapan (raw vegetables) and steamed rice.

Ingredients:
500 gr boneless beef, sliced
2 tbsp Indonesian sweet soy sauce ( I’d rather use Cap Bango than ABC, but since I can not find Cap Bango for purchase in Winnipeg, I use ABC instead)
1 tbsp shrimp paste (it’s different with dried shrimp paste or terasi)
3 tbsp oil to saute
300 ml water
3 red chilli peppers, discard the seed, finely sliced

Puree/Blend:
6 shallots
3 cloves garlic
6 bird’s eye chilies (I added sambal oelek instead)
1 tsp ground white pepper
1 large tomato
sat as desired

Directions:
1. Marinate meat with sweet soy sauce and petis udang for 15 – 30 minutes.
2. Heat oil in a skillet over medium heat, add pureed mixture, saute until fragrant. Add meat, stir thru until the meat stiff and add water. Cover the skillet with lid and cook in medium heat, stir occasionally until the meats are tender and the water almost evaporates.
3. Uncover the skillet, keep stirring until the oil of meats come out.
4. Add red chilli peppers, stir until soft. Remove from heat and serve.

PS: Use less red chillies and bird chillies, if you don’t like hot taste.
Tips: Beat the meat with a meat mallet before slicing/cutting to tenderize

Ingredients:
300 grams tempeh, cut into 4 x2 cm squares
2 tofus, cut each tofu into 8 small cubes

For Marinating
2 gloves garlic, grated
1 tsp salt
150 ml water

Ground/Pureed Spices:
3 bird’s eye chilies
2 gloves garlic
5 shallots

1 tsp shrimp paste
1 tbsp Indonesian sweet soy sauce
1/2 tsp salt
200 ml air
oil to deep fry tofus and tempehs
2 tbsp fried shallots for sprinkle

Directions:
1. Combine tempeh and tofu with marinating ingredients. Marinate for 30 minutes. Deep fry tofu and tempe until golden brown.
2. Stir fry the pureed/ground ingredients until fragrant. Add tempeh and tofu, stir evenly.
3. Add shrimp paste, sweet soy sauce, salt and water. Cook until the spices dissolve.
4 Serve by sprinkling freid shallots over.

Mendoan Tempe
A word mendoan is from Banyumas dialect, one of some dialects in Javanese. It means under-cooked or not hard or limp. That is why to make this mendoan need lots hot oil and quick-cooked technique. We eat this by dipping mendoan tempe into sambal kecap. Every person has a different kind of flours to make mendoan tempe, some use mixture rice flour with all purpose flour, some use all purpose flour, some use self-raising flour, and I myself use cake and pastry flour.

Ingredients:
500 grams tempeh, cut into 1/2 cm thick
oil for deep frying

Batter
1 1/4 cup cake and pastry flour
230 ml cold water
4 Chinese chives (Indonesian: kucai, Chinese: he), finely sliced

Grind into spice
1 1/2 tsp corriander seed
3 candlenuts
5 cloves garlic
7 cm kencur (also known as kaempferia galangal)
salt as desired

Sambal Kecap
1/4 cup kecap manis (Indonesian sweet soy sauce)
2 tsp fresh lime juice*
bird’s eye chillies (as many as you desire), sliced

*some people don’t add lime juice, I preferably add due to the sweetness and thickness of kecap manis bango’s brand.


Directions:

  • Combine cold water with ground spices. Add flour and whisk quickly. Dip gently the tempeh slices into batter. Deep fried in hot oil until it turn golden brown and cooked through.
